It’s pancake Tuesday! Growing up, I always looked forward to eating pancakes and sausage at our local church on Shrove Tuesday. I don’t know why, but those pancakes made from a box and the maple syrup (that had very little real maple) always tasted so good. As a grown up, not so much!
Now we stay home on Pancake Tuesday and make our own from scratch. We always mix it up, and today I’ll be making blueberry oatmeal pancakes from a homemade mix I always like to have ready to go in the pantry.
I found this homemade pancake mix recipe by Tracey’s Culinary Adventures with rolled oats and whole wheat flour a while ago. (I do mine a bit different and forgo the canola oil and add melted butter just before making instead.) It’s a basic recipe you can easily add fruit or nuts to as well. Today, it’s blueberries, walnuts and pure maple syrup.

Perfect post for today! We love pancakes with homemade maple syrup from our maple tree in the backyard… tapping it has become a family tradition! Even our little wiener dog Emmitt gets into the spirit of things chasing the squirrels away from the sap!

Shauna we do the local church thing. Not for the pancakes as you say :) just for the community. I have a go-to multigrain pancake recipe too. What a smart idea to keep the dry mix on hand.

Hooray for butter over canola oil. We do breakfast for dinner about once a week. I’m a master at gluten-free breakfasts now. :)

No canola oil in our house and we do tend to eat gluten free, but sometimes a slice of whole grain bread or a few pancakes are a treat.
