Have you thought about Valentine’s Day yet? It may still be 2 weeks away, but it’s one of those holidays that has a way of sneaking up all of a sudden.
If you’re looking for some new ways to celebrate the day of love, you’re in for a real treat. I mean, the world could use a good dose of love right now, right? For us, Valentine’s Day is all about spending time together and enjoying the simple things. Most often, we cook a nice dinner at home, which always involves indulging in some sort of decadent dessert. This year, I plan on making some delicious chocolate chunk skillet cookies. Oh, yes, it’s going to be delightful!

Of course, you can never go wrong with chocolate. Am I right?
And, when it’s thrown in an ooey-gooey giant oatmeal cookie and baked in a mini cast iron skillet to perfectly crisp up the edges, it’s absolute heaven! If you’ve never tried a skillet cookie, you’re in for a real treat. They look so dang cute too!
To tell you the truth, I’d be inclined to eat one right out of the oven on any regular ‘ol day. I mean, the aroma coming from the kitchen as they bake is absolute awesomeness!
On Valentine’s Day, though, I feel it’s a bit more acceptable to wait. That’s when my will power is truly tested.
Nothing says I love you like I baked cookies and didn’t even try one tiny bite until you got home!
On Valentine’s Day, you always put your loved ones first. (As a mom and wife, that’s usually the norm anyway.)
You can even go the extra mile and make some heart-shaped truffles to garnish your dessert and make it all Valentines-ish. You can find out how easy it is to make them HERE.
And when your husband’s favourite food is ice cream (next to pizza), you go heavy with the scoop. Of course, a few plump raspberries finish it off nicely too.
Although these skillet cookies are generous enough to share, it’s okay to let your selfish side come out and eat one on your own. Go ahead and enjoy, guilt-free. I’m pretty sure your loved one(s) won’t mind!
Oatmeal Chocolate Chunk Skillet Cookies
Serves 3 large portions or 6 when shared
An ooey-gooey oatmeal chocolate chunk skillet cookie with crisp edges.
30 minTotal Time
- 1/2 cup all-purpose flour
- 1/4 cup quinoa flour
- 3/4 tsp. baking soda
- 1/2 tsp. sea salt
- 1/2 tsp. cocoa powder
- 1/4 tsp. ground cinnamon
- 6 TB. unsalted butter, room temperature
- 1/3 cup sugar
- 1/3 cup brown sugar, packed
- 1 large egg
- 1 tsp. vanilla extract
- 2/3 cup rolled oats
- 1/2 cup dark chocolate chunks
- 1/4 cup pecans, chopped
- Preheat oven to 350 degrees F. Lightly grease 3 small (6 inch) cast iron skillets and arrange on a baking sheet.
- In a medium bowl, whisk together flour, baking soda, salt, cocoa powder and cinnamon. Set aside.
- In a separate mixing bowl or the bowl of a stand mixer, beat butter and sugar until light and fluffy (about 2 minutes). Mix in egg and vanilla, scraping down the side of the bowl as necessary. Gradually add dry ingredients, followed by the oats, mixing until just incorporated. Stir in chocolate chunks and nuts.
- Divide dough into 3 equal parts and scoop into prepared skillets , pressing down with your fingers slightly. Leave some space around the edges.
- Bake for 18 to 20 minutes or until edges are golden and centre is just set. Less time will result in an ooey-gooey cookie and more will be chewy and crispy. We like ours somewhere in the middle.
- Let cool for 5 minutes before serving. Ice cream is optional, but highly recommended!
The quinoa flour adds a bit of a nutty flavour to the cookie, along with fibre and protein. Feel free to substitute all-purpose flour if you prefer.
