Looking for something new to eat in the morning? Try this coconut quinoa breakfast pudding. Keeps you full and satisfied. Yes, dessert for breakfast!
Smoothies are my breakfast of choice. They’re a quick and easy way to get a healthy dose of fruits and vegetables first thing in the morning. Ever since we got a new powerful blender, we’ve been eating organic baby kale, spinach and other greens like crazy, along with berries, cherries and mangos. Love them all!
Sometimes, though, it’s nice to mix it up a bit and try something a little different, especially when there’s a chill in the air. My new favourite breakfast alternative is quinoa pudding. Dessert for breakfast? Yes, it’s okay. Go ahead, I think even mom would approve!
How to Make Quinoa Pudding
(printable version below)
Ingredients
- 400 mL can coconut milk*
- ½ cup milk*
- ¼ cup coconut sugar*
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
- ¼ tsp. salt
- 1 cup quinoa, rinsed
- 1 tsp. vanilla
*Note- you can interchange coconut milk with whole milk or almond milk and use maple syrup instead of coconut sugar (the flavor will be slightly different, but still delicious).
Directions
- In a medium saucepan, combine the coconut milk, milk, coconut sugar, cinnamon, nutmeg and salt. Heat over medium heat until it comes to a boil, stirring occasionally.
- Add quinoa and return to a boil. Reduce heat to low and simmer for 25-30 minutes, stirring occasionally. The pudding will thicken and the quinoa will soften.
- Turn off heat and stir in the vanilla. Cover and let sit for 5 minutes.
Makes 6 servings.
This quinoa pudding or porridge bowl can be served warm or cooled in the fridge. My favourite is making it the night before and eating it for breakfast the next morning. It keeps me full until lunch!
As an option, top with fresh fruit, dried fruit, nuts, etc.
I like topping mine with a little cereal cream (or coconut cream), a few chopped almonds and a bit more cinnamon. Yum!
Good morning, Sunshine!

Yum! I’ll have to give this a try. I’m definitely on the quinoa bandwagon, but honestly haven’t tried it sweet! Have you tried this with red or black quinoa? Probably white would be better as a pudding (I always find it fluffier/softer).

My kids will love this. I’m not a huge fan of breakfast but have a smoothie every morning. I just can’t seem to manage the quinoa in the am. I do make variations for the kids though so this is going to be added to the repertoire. Thanks for the recipe Shauna!

Looks delicious Shauna- I bet my little guy would love this – he asks me for ‘hot cereal’ every morning and this would be so much healthier then the usual oats I make!! Pinning:)

I like that you can keep it in the fridge for a few days, which makes mornings so much easier. Thanks for sharing it on Pinterest!

Thanks Shauna! I haven’t tried quinoa pudding for breakfast but will give it a try. My son loves oatmeal (we call it “mush”) so I’m sure he’ll like this – just the word pudding in the name will have him wanting it!! Thanks again for the recipe.
