Chocolate Toffee Coconut Cookie Mix Jars
These chocolate toffee coconut cookies are chewy and delicious. Make jars of cookie mix for Holiday gifts, or store in your pantry for freshly baked cookies in a snap!
‘Tis the season for cookie baking and eating! Over the weekend I made these delicious chocolate toffee coconut cookies for my family and thought it would be fun to create jars filled with cookie dough mix to hand out as Christmas gifts.
Why You’ll Love These Cookie Mix Jars
Believe me when I say your neighbours, friends, teachers, coworkers, and pretty much anyone else on your list will love the taste of these decadent cookies. It doesn’t get much better than the combination of rich chocolate, along with chewy toffee and coconut. Yum!
In the oven, the toffee melts, leaving a cookie that’s filled with gooey and sticky caramel. Don’t blame me if you can’t stop at just one!
As with most baking mixes, this one includes the dry ingredients needed to make the cookies. The recipient only needs to add a few wet ingredients (butter, eggs and vanilla) before baking. Eliminating a series of steps makes it quick and simple for bakers (and even the non-bakers on your list).
To make it easy, I’ve also created a printable recipe card for you to attach to the jar or baking gift basket (if you’re adding a few more items). As an option, you can simply include the link to this blog post on a handwritten card so they can find the instructions when they’re ready to bake the cookies.
With the busy Christmas Season upon us, having cookie dough mix ready to go is so convenient. Some days call for freshly baked cookies ASAP, especially when there’s a mountain of gifts to wrap. These cookies are the perfect companion to a tall glass of cold milk, mug of coffee or cup of tea.

How to Make Chocolate Toffee Coconut Cookie Mix
Ingredients
- 1⅓ cups semi-sweet or milk chocolate chips
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ¾ cup packed light brown sugar
- 1½ cups medium desiccated unsweetened coconut
- 1 cup toffee baking pieces (Skor bits)
Supplies
- Small (250ml) and large (750ml) glass jars OR one, 1 litre jar (see tips below)
- Fabric or wrapping paper (optional for covering plain lid)
- Printed recipe card (see step 3 below)
- Baker’s twine or ribbon, plus small decorations (optional)
Cookie Mix Tips
- If you want to use one large jar instead (1 litre size), layer ingredients in order with chocolate chips being at the top. I suggest cutting a disk of parchment paper or using a plastic baggie to separate the toffee baking pieces and chocolate chips. I opted to use Bonne Maman jars I had on hand instead.
- Use a funnel, piping bag or small scoop to carefully add each ingredient. Be sure to break up any lumps before adding.
Cookie Dough Mix in a Jar Directions
Step One: Place chocolate chips in the small jar.
Start layering ingredients in the large jar, pressing down slightly and levelling as you add each layer in order:
- flour, salt, baking powder
- brown sugar
- coconut
- toffee baking pieces
Step Two: Fasten lids to jars. If they’re plain, cover with small piece of fabric or wrapping paper. For 2-piece lids, simply sandwich between the snap lid and ring. You could use a bit of hot glue to secure instead.
Step Three: Secure jars together with ribbon, baker’s twine and/or hot glue. As an option, add jars to gift basket or box.
Print Your Cookie Recipe Card
Step Four: Download the cookie recipe instructions and print on white card stock (8.5×11″) using the best quality setting on your printer. Cut out and attach using a hole punch and baker’s twine, or simply place in basket. Add decoration(s).
How to Store the Cookie Mix
This cookie mix will keep in a dark, cool, dry place, such as a cupboard or pantry for up to 2 months. Be sure to use fresh ingredients when you put together.
Tip: Place the toffee bits in a plastic baggie before placing them in the jar (if you haven’t already) to prevent them from going soft.
Making the Cookies From Scratch
Of course, if you just want to make the cookies for yourself instead of preparing the jars, add the dry ingredients to a bowl, setting aside ½ cup of chocolate chips first. Then, follow the instructions for preparing the cookie dough and baking. Refer to the recipe card below for measurements and steps.

Chocolate Toffee Coconut Cookie Mix
Ingredients
For the cookie mix
- 1 ⅓ cups semi-sweet or milk chocolate chips
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ¾ cup light brown sugar, packed
- 1 ½ cups medium desiccated unsweetened coconut
- 1 cup toffee baking pieces (Skor bits)
For the cookie dough
- ¼ cup butter, cut into small cubes
- 2 large eggs
- 1 teaspoon pure vanilla extract
Instructions
For the cookie mix
- Place chocolate chips in a small jar (250ml). Layer remaining ingredients in a large jar (750ml), starting with the flour, salt, baking powder, brown sugar, coconut, then toffee bits. Press down slightly and level as you add each layer. Secure with lid.
For the cookie dough
- Preheat oven to 350°F. Line 2 large cookie sheets with parchment paper. Place ½ cup chocolate chips in a large microwave safe bowl. Microwave for 60 seconds, then stir. Heat 30 to 60 seconds more until chocolate is melted. Stir well.
- Add butter to chocolate and stir until melted. Beat in eggs one at a time, followed by vanilla. Stir until blended.
- Add half the cookie mix to the wet mixture and stir, breaking up any lumps. Add remaining mix and chocolate chips, then stir until well-combined.
- Drop heaping tablespoons (size 40 cookie scoop) at least 2” apart onto prepared cookie sheets. Press tops down slightly with fingers. Bake 10 minutes or until edges are just firm to the touch (middles will be soft). Do not over bake. Allow cookies to stand on cookie sheet for 5 minutes, then carefully transfer to cooling rack.
