Chocolate Chip Peanut Butter Energy Bites

  • cup peanut butter
  • 4 TB. raw honey
  • 1 ½ cups quick cooking oats
  • ½ cup ground whole almonds
  • ½ cup unsweetened coconut
  • ¼ cup ground flax
  • ½ cup chocolate chips


  1. Combine peanut butter and honey in a large microwave safe bowl. Heat until just melted (about 20 seconds). Stir in the oats, ground almonds, coconut, and flax. Fold in the chocolate chips (don't over mix).
  2. Using an ice cream scoop or large spoon, shape mixture with your hands pressing into balls (around 1.5" in diameter). Store in an airtight container.
