Skillet S’more Brownies Camping Dessert

A decadent camping-inspired dessert that will please kids of all ages!

Ingredients

Dry ingredients:

  • ¼ cup cocoa powder
  • ¾ cup brown sugar
  • ¼ cup all-purpose flour
  • 2 TB. almond flour
  • ½ tsp. salt
  • ¼ cup chocolate chips

Wet ingredients:

  • cup melted butter
  • 2 large eggs
  • 1 tsp. vanilla

Toppings:

  • 3-4 large graham wafers broken into pieces
  • 4 oz. dark chocolate cut into chunks
  • 8-10 large marshmallows cut in half crosswise

Instructions

  1. Preheat oven or grill to 350°F. Grease 10" cast iron skillet with coconut oil or butter.

  2. Place dry ingredients in a medium sized bowl and mix in eggs and vanilla. Gradually add melted butter, stirring until well combined. Pour batter into cast iron skillet and top with graham wafer pieces.

  3. Bake for 20 minutes until slightly firm on top. (Do not overbake)
  4. Tip: If cooking on the grill, watch your temperature gauge to make sure it doesn't get too high. Avoid peeking or the heat will escape. I find it works best to have only the front and back heat sources on while baking on the grill.

  5. Remove brownies from the oven or grill. Turn heat up to 400°F.

  6. Top brownie with marshmallows cut side down. Sprinkle chocolate chunks on top. Place back in oven or grill for 5-7 minutes until marshmallows turn golden brown and the chocolate is soft.
  7. Tip: Use broiler or torch if you prefer your marshmallows to be darker. Watch closely!
  8. Serve warm.

Recipe Notes

  • To make things easier, combine dry ingredients and place in a jar or container to take with you camping.
  • For gluten-free brownies, simply swap out all-purpose flour with your favourite GF flour blend. Also, use gluten-free graham wafers/crackers.
