Gluten Free Waffles With Pamela's Mix

These gluten free waffles are easy to make, nutritious and oh-so-delicious. Whip up an extra batch to freeze for busy weekday mornings!

Ingredients

  • 3 cups Pamela's baking and pancake mix not packed
  • 1 tablespoon sugar optional
  • 1 teaspoon baking powder
  • 3 large eggs separated
  • 2 cups milk or milk alternative
  • 1 teaspoon pure vanilla extract
  • cup butter melted

Instructions

  • Combine baking mix, sugar and baking powder in a large bowl.
  • In a separate bowl, combine milk, egg yolks and vanilla. Mix well.
  • Beat egg whites until stiff (not dry) peaks form. Set aside.
  • Add milk mixture to dry ingredients. Stir until just combined. Stir in melted butter and mix until incorporated.
  • Gently fold in egg whites.
  • Follow waffle maker instructions for cooking.

Notes

  • If batter is too thick, thin out with a bit more milk.
  • These waffles took about 4 minutes to cook ½ cup batter in each slot of my Breville Waffle Maker (using custom setting), which is less than my original recipe. Once waffles stop steaming (or almost), they're most likely done. Should be golden brown in colour.
  • To freeze, cool completely, then store in an airtight container with a bit of parchment or waxed paper between the layers.
