Coconut Quinoa Breakfast Pudding

Smoothies are my breakfast of choice. They’re a quick and easy way to get a healthy dose of fruits and vegetables first thing in the morning. Ever since we got a new powerful blender, we’ve been eating organic baby kale, spinach and other greens like crazy, along with berries, cherries and mangos. Love them all!

Sometimes, though, it’s nice to mix it up a bit and try something a little different, especially when there’s a chill in the air. My new favourite breakfast alternative is quinoa pudding. Dessert for breakfast? Yes, it’s okay. Go ahead, I think even mom would approve!

Quinoa Pudding with Coconut Milk and Chopped Almonds

How to Make Coconut Quinoa Pudding

Ingredients

  • 400 milliliter can coconut milk*
  • ½ cup milk*
  • ¼ cup coconut sugar*
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 cup quinoa, rinsed
  • 1 teaspoon vanilla

*Note: you can interchange coconut milk with whole milk or almond milk and use maple syrup instead of coconut sugar (the flavour will be slightly different, but still delicious).

Directions

  1. In a medium saucepan, combine the coconut milk, milk, coconut sugar, cinnamon, nutmeg and salt. Heat over medium heat until it comes to a boil, stirring occasionally.
  2. Add quinoa and return to a boil. Reduce heat to low and simmer for 25-30 minutes, stirring occasionally. The pudding will thicken and the quinoa will soften.
  3. Turn off heat and stir in the vanilla. Cover and let sit for 5 minutes.

Makes 6 servings.

This quinoa pudding or porridge bowl can be served warm or cooled in the fridge. My favourite is making it the night before and eating it for breakfast the next morning. It keeps me full until lunch!

As an option, top with fresh fruit, dried fruit, nuts, etc.

I like topping mine with a little cereal cream (or coconut cream), a few chopped almonds and a bit more cinnamon. Yum!

  4. Yum! I’ll have to give this a try. I’m definitely on the quinoa bandwagon, but honestly haven’t tried it sweet! Have you tried this with red or black quinoa? Probably white would be better as a pudding (I always find it fluffier/softer).
